Ancient aristocratic wine cellar

The vinification process represents a very important moment through which our cellars can obtain a product of excellence that is both delicious and tasty. Poggio Degli Ulivi in Siena follows the family tradition, making wine from the grape juices in small-capacity steel tanks. Vinification lasts from 23 to 25 days. Maceration is performed by combining ancient techniques with new technologies in the oenological field.

  • Refinement, ageing and temperature

    The ageing process in our Tuscan wine cellar lasts approximately 3 years, during which the wines are stored in oak barrels of 25 hectolitres each. The wine is then stored for one year in individual bottles. Our Tuscan wine cellar knows how important it is to maintain a temperature-controlled environment. Therefore, we make sure that the climate is favourable, keeping all the stages of the wine-making process under constant care.
